Potato Soup
6 cups peeled & cubed potatoes
5 cups water
2 cups chopped onion
1/2 cup chopped celery
3/4 cup thinly sliced carrots
1/4 cup butter or margarine
4 teaspoons chicken bouillon granules
2 teaspoons salt
1/4 teaspoon pepper
1 12 oz can evaporated milk
3/4 cup bacon crumbles (optional)
3 tablespoons fresh chopped parsley (optional)
In a large crock-pot, combine the first 9 ingredients. Cover and cook on high for 7-8 hours. Add milk, bacon and parsley. Mix well. Cover and cook another 30 - 60 minutes until heated through.
